Moringa Paratha
Moringa or Drumstick leaves are THE SUPERFOOD now and loaded with chock full of nutrients. When you mix this superfood with whole wheat flour, almond flour, flax meal and spices, you got one helluva super meal! So lets get to it…
What is Moringa?
First, lets learn a few good things about Moringa:
Moringa is a kind of a tropical plant which grows in tropical and sub-tropical places like Asia and Africa. People in India have been using this plant and its derivatives for centuries to treat several health conditions.
Moringa is loaded with vitamins and minerals. The leaves are rich in Vitamin C and potassium. It also has calcium, iron, and amino acids, which help your body heal and build muscle. They are also packed with antioxidants, substances that can protect cells from damage and boosts immunity.
Now that we have learned a few good things about moringa or drumstick leaves, lets see how we can make a yummy yummy paratha/thepla with this amazing leaves. So the recipe I am making right here is kinda like a thepla(a gujarati flatbread made with wheat flour, besan/chickpea flour and methi/fenugreek leaves) but instead of methi leaves we are adding drumstick leaves.. delicious! Adding yogurt like an authentic thepla is optional. I am not adding it here because I wanted to freeze it for future use. Also, I am using Almond flour here instead of besan/chickpea flour. I started adding almond flour to my rotis ever since a dear friend of mine suggested this to lower the carbs in my rotis. I owe her big time and my rotis are so soft and have never been better!
Can you see how beautiful the leaf is? That vibrant green makes me so happy. These tiny leaves come on a big branch, you have to shred them from the branch before you cook them, the branch is inedible. In order to make it a little easy to mix into the dough, I blanched the leaves for a couple minutes in hot water. Then mix that with some whole wheat flour, almond flour, flax meal and some spices to make it a complete and healthy roti.
In this post, I am also going to freeze this rotis to be used later. This makes life easier when you have less time on your hands or have no ideas about what to make for dinner. There.. problem solved!
Lets get to the recipe then, Heres what you need:
Ingredients:
- 2 cups of drumstick/moringa leaves
- 2 cups whole wheat flour
- 1/2 cup almond flour or chickpea flour
- 2 tbsp flax meal
- Salt to taste
- 1 tsp chilli powder or to taste
- 2 tsp Dry mango powder/ Amchur
Procedure:
- First we blanch the drumstick leaves by dunking the leaves in boiling water for a couple minutes and then running them under the cold water for a couple more minutes.
- Then Mix the blanched leaves, Whole wheat flour, almond flour, flax meal and the rest of the spices. Add water if necessary and make a dough.
- Rest the dough for half hour and knead it. Roll the rotis and separate them using parchment Paper. You can freeze them at this point or cook them on tawa to eat immediately. Below is a simple plate for my kid with Moringa paratha, dal and some pickle.
- When heating up the frozen parathas, thaw them out at room temperature for atleast half hour or Thaw them overnight in refrigerator. Then cook them on tawa like any regular roti. This is such a timesaver on busy weeknights.
