3 Ingredient Homemade Chocolate

I love chocolate, I think I have said this a million times before! With the holiday season upon us and with the continuous staying at home, eating healthy has definitely taken a back seat, especially at my home. To stay on track(just a little), we planned to make this healthy homemade coconut oil chocolate with only 3 ingredient. ‘Tis the season of giving, so we are planning to give this homemade chocolate to our friends and family, to our milkman, to our essential workers, to our delivery drivers, to our garbageman, to everyone who are making our lives easier and better everyday. We are extremely grateful for their service. We may also leave this chocolate for Santa in place of cookies, I think he would like a change of pace. 😉

How is this healthy and what ingredients are used?

By now, there are many research articles that state that chocolate is good for you! Well, that was enough for me to load up on chocolate, but the store-bought chocolate has so many unnecessary ingredients that are not quite healthy. So, this led me on a search for a healthy chocolate that my whole family can enjoy. After finagling with this recipe( a lot of experimentation was required), it finally came down to this exact measurements. So, lets see what ingredients are used and how is this chocolate healthy:

  1. Raw Cacao powder: Raw cacao powder is nothing but cocoa powder that has undergone minimal processing. Cacao powder contains very high amount of antioxidants. It boosts serotonin and endorphin levels which reduces depression and is a general “Pick-me-up”. The flavonoids in the chocolate increases blood flow to the heart and lowers blood pressure. I prefer to use Raw cacao powder in my chocolate because it has deep and intense flavor, but I have made this recipe with regular Hershey’s cocoa powder and it turned out superb as well.
  2. Coconut oil: Coconut oil is the most important ingredient here, you cannot make this chocolate with that. Of course, you can use cocoa butter but coconut oil is much healthier and more easily available in stores. Use a cold-pressed, unrefined virgin coconut oil for best results. Coconut oil increases the HDL cholesterol levels which improves the heart health, improves digestion and boosts immunity.
  3. Maple Syrup: Pure maple syrup is much better than refined sugar any day. It is rich in antioxidants and good for your immune system. Maple syrup can be replaced with raw honey or agave syrup.
Optional ingredients:

Sea salt and pumpkin seeds are the optional ingredients I use in my chocolate. Salt brings out the natural sweetness of chocolate, they belong together perfectly. To keep it nut-free, I add sprouted pumpkin seeds to my chocolate, they are super healthy because of sprouting and have a crunchy texture which goes really well with this dark chocolate.

What other flavors or add-ons can be added to this chocolate?

This chocolate is very versatile. You can add nuts and dry fruits and make a fruit and nut chocolate. Raisins, cashews, pecans, almonds, dried Cranberries, dried blueberries and cherries are a few choices you can use. You can also add orange zest, a little orange extract and make orange flavored chocolate. You can add a little peppermint extract and make mint chocolate. All of these are yum!

Process to make this 3 ingredient Homemade Chocolate:

Its super super easy! I cant even begin to describe how easy it is! By the time, I start talking, its done 😀. Lets see the steps:

  • First melt the coconut oil in microwave. You can use the double boiler method and melt it too. Do not heat up the oil in a pan directly, we want to keep the chemical composition of the oil intact and not change the sweet taste of the coconut oil. Set the time for coconut oil in microwave for 2 minutes until its just melted and little hot.
  • Add the cocoa powder and use a whisk to mix in the cocoa powder, make sure there are no lumps.
  • Add in maple syrup and whisk till everything is mixed together.
Process to make homemade chocolate.
  • I am using flexible ice cube trays from IKEA to make this chocolate. Add pumpkin seeds to the bottom of the tray and add the above chocolate mixture to the trays.
  • Add sea salt on top of the chocolate and keep it in the freezer for 30 minutes to set the chocolate. After the chocolate is set, remove from trays and store in refrigerator.

Materials used to make the chocolate:

All we need is a whisk and a way to melt your coconut oil, you can use microwave or double boiler method(Heat-proof bowl over a pot of boiling water). I am going to link the trays that can be used for chocolate and the gift boxes I used above 👆

  1. Chocolate trays: I used ice cube trays from IKEA, you can use a simple parchment lined tray with raised edges and break the set chocolate into bark to give the chocolate a rustic feel. Or you can use these trays to make fancy shapes like above: https://amzn.to/3lAPrBu

How to store this 3 ingredient homemade chocolate:

The only disadvantage this chocolate has is that it does not hold its shape in hot temperatures. It stays perfect when kept in refrigerator, just pop in your mouth directly from the fridge 😀. This chocolate will stay fresh in your refrigerator for at least a month.

  • Melt the coconut oil in microwave for 2 min until its just melted and little hot.
  • Add the cocoa powder and use a whisk to mix in the cocoa powder, make sure there are no lumps.
  • Add in maple syrup and whisk till everything is mixed together.
  • Add pumpkin seeds to the bottom of the chocolate mold tray and add the above chocolate mixture to the trays.
  • Add sea salt on top of the chocolate and keep it in the freezer for 30 minutes to set the chocolate. After the chocolate is set, remove from the molds and store in refrigerator

Notes

  • For more darker chocolate, add only 1/3 cup maple syrup to achieve the necessary bitterness.
  • You can use double boiler method to melt the coconut oil instead of the microwave. DO NOT heat the coconut oil directly in a pan on stove-top.
  • This chocolate stays in better shape when stored in refrigerator, I recommend not keeping it at room temperature.
  • Adding pumpkin seeds and sea salt as mentioned in the above steps is optional. Just pour the chocolate into molds and set it in freezer.
