Oven Roasted Purple Sweet Potato Fries

Purple Sweet potato fries are vibrantly colored, crispy fries with a slight hint of sweetness and a kick of heat. These quick and healthy fries are oven roasted or baked and are awesome to eat on their own, but, are even more amazing with a creamy dip.
I love adding colors to our diets. The first time I saw this purple sweet potato was at a Farmers Market and I was intrigued. I immediately bought it and made the baked the sweet potato.. delicious with just a dollop of salted butter, YUM! The next step was to make my kids eat it, so I made these crispy fries and they loved them! We like baking these fries and not deep frying them, so they are super healthy. More colors and Antioxidants for the win.. woohoo! These fries are great as a side or as a simple and healthy snack.
I also make these beautiful and vibrant purple sweet potato flatbreads and my whole family devours them! They are absolutely soft and delicious.
How to make Oven roasted Purple Sweet potato Fries?
- First, wash and chop the sweet potato into fry-shaped sticks. We like the fries a bit sturdier, so I cut them into this rectangle shaped sticks. Peeling the sweet potatoes is personal choice, we like the crispy skin.
- Add the chopped sweet potato to a parchment lined baking sheet.
- Add salt, red chili powder/Paprika, garlic powder, Olive oil and mix them all together.
- Bake at 425 °F for 15 minutes. After 15 minutes, give the baking sheet a shake and bake again for 5 more minutes. Remember, Each oven is different, the baking temperatures might vary depending on the oven.

For purple sweet potato fries, pick the Stokes purple potato variety, which have purple-brown skin and purple flesh and not the Okinawan Sweet potato with white skin. Okinawan sweet potato is much starchier and not a great fit for sweet potato fries.
They taste great on their own because of the spices we are using, but you can use any creamy dip you like. Yogurt dip or avocado dip are a couple of our favorites. It goes really well as a side for a hearty soup like broccoli cheddar.

Baked purple sweet potatoes that are healthy, crispy and slightly sweet with a kick of heat.
Ingredients
- 1 big purple Sweet potato (Or orange sweet potato)
- Salt to taste
- 1 tablespoon Olive oil
- 1 teaspoon Red chili powder
- 1 teaspoon Garlic powder
Instructions
- Preheat oven to 425 °F.
- Wash and chop the sweet potato into fry-shaped sticks. Keeping the peel makes the fries crispy, but feel free to peel the sweet potatoes if you are not a fan.
- Add the chopped sweet potato to a parchment lined baking sheet.
- Add salt, red chili powder/Paprika, garlic powder, Olive oil and mix them all together.
- Bake at 425 °F for 15 minutes. After 15 minutes, give the baking sheet a shake and bake again for 5 more minutes.
Notes
- These fries can be made using regular orange sweet potato too.
- Each oven is different, the baking temperatures might vary depending on the oven.
- Make sure the fries are all cut in equal sizes, thinner fries bake faster than the thicker ones, so keeping them uniform is the key.
- Place the sweet potatoes in a single layer on the baking sheet or they get mushy.
- Baking time depends on the size of the fries and your oven.
