Easy Ice cream with Instant pot Dulce de Leche

Super easy, 3-ingredient, no churn ice cream with dulce de leche. Dulce de leche is a creamy caramel-y confection made easily in Instant pot, mixed with whipped cream to make this amazing, creamy and light ice cream. This ice cream has delectable Caramel-y notes that satisfy both vanilla and chocolate people alike.

What is dulce de leche?

Dulce de leche, a beautiful caramel-like confection or syrup from Latin America, literally means “candy from milk”. Its made by slowly heating milk and sugar for several hours until the mixture caramelizes and thickens. Use it on ice cream and pancakes or in brownies, cakes and flan. I always make extra to eat it by the spoonful.. its sooooo delicious!

Difference between caramel and dulce de leche:

Though they both look alike, they are completely different. They almost taste alike too but the ingredients used are different too. Caramel, means “Burnt sugar”, is made by caramelizing sugar and water on high heat, butter and cream are added to make a golden caramel sauce. Dulce de leche is slow cooked till the milk and sugar mixture caramelizes into a thick sauce. While caramel ice cream is sweet, dulce de leche version has subtle sweetness to it, that makes it irresistible.

How to make dulce de leche?

Dulce de leche can be made from scratch, starting with milk and sugar. But using a can of sweetened condensed milk is the best and greatest shortcut ever. There are several ways to make dulce de leche but Instant pot method is the easiest, safest and sure to give you perfect results.

  • Peel the label off the condensed milk can and open the can. Do Not put a sealed can of condensed milk in the Instant pot. You do not want pressure building inside a can in a pressure cooker. This is what I usually do. But, many people have done it with sealed cans and swear by it. Just let the can cool off completely (usually overnight) before opening it.
  • Seal the can with aluminum foil and place it on the trivet in the Instant pot. Add water to the instant pot until the can is submerged halfway (See my finger touching the top of the water in the below picture).
  • Close the lid of the instant pot and set pressure cook/Manual mode, at high pressure, for 40 minutes, Vent in sealing position.

  • Once the timer is done, remove the can carefully(use a tongs or kitchen towel) from the instant pot and set it on countertop.
  • Remove the foil cover and let it cool down completely. The can needs to be at room temperature to handle it safely.

How to make dulce de leche ice cream?

  • Transfer the contents to a mixing bowl and and whisk till the dulce de leche is smooth and not grainy and set.
  • Add 1/4 cup whipping cream to make it spreadable and thin.

  • Reserve 1/4 cup of the dulce de leche + whipping cream mixture.
  • In a large mixing bowl, take the rest of the heavy whipping cream and add a splash of vanilla to it. Using a handheld electric mixer, beat the heavy whipping cream till it forms soft peaks (When you lift up the hand mixer, the whipping cream should form floppy peaks).
  • Fold the dulce de leche mixture into the whipped cream very gently, keeping the whipped cream light and airy.

  • Use a loaf pan or a freezer-safe container and fill it with half of the ice cream mixture. Spoon or drizzle the reserved dulce de leche mixture and swirl it in using a toothpick or knife.
  • Scoop the other half of the ice cream mixture and drizzle with more dulce de leche syrup and swirl it again.
  • Cover it with a cling wrap and freeze for 4-6 hours or preferably overnight.

A few things to know about this easy icecream:

Can I use store bought dulce de leche?

Yes, absolutely! I never find it at my local stores but yes, this recipe can be easily made using a store bought sauce. Just transfer to a microwave safe container and warm it up in microwave for 2 minutes in 30 second intervals until its smooth and flowy.

Can I make the dulce de leche in the oven or stovetop?

Yes, there are many ways to make the dulce de leche. On the stovetop, the sealed cans of condensed milk are simmered in a pot of water for 3-4 hours to make the dulce de leche. You can make it in the oven too!

How is this ice cream different than regular ice cream?

This no churn whipped cream icecream mouthfeel is different, its more creamier and lighter, but has higher fat content, than the regular ice cream. Can I use a glass jar instead of cans of condensed milk to make the dulce de leche in Instant pot?

Yes! Transfer the condensed milk to a mason or canning jar and wrap it up with aluminum foil or the canning jar lid. If you use the sealed jar in the instant pot, please wait until the jar is completely cool before opening it.

Notes

  • I use opened condensed milk can to make the dulce de leche. But many people have used sealed can in the instant pot. Let the can cool off completely (usually overnight) before opening it.
  • Top the icecream with toffee bits, nuts, chocolate chips or an extra drizzle of dulce de leche and a sprinkle of sea salt.
  • I have only used full fat condensed milk for this recipe, I suggest not to use low fat or fat free kind.
